Ingredients

  • 4 cups half and half
  • 4 large eggs
  • 1 1/2 cups sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 tablespoons margarine
  • Graham crackers
  • 2 teaspoons vanilla extract
  • Ripe bananas

Instructions

  1. Whisk together the half and half, eggs, sugar, cornstarch, and salt in a large saucepan over medium-low heat, stirring constantly.
  2. Cook until the mixture thickens and comes to a boil, about 1 to 2 minutes.
  3. Remove from heat and stir in the margarine (butter) and vanilla extract.
  4. Layer graham crackers, sliced bananas, and the pudding in a 2 1/2 to 3-quart casserole dish, repeating layers as needed.
  5. Cover and chill the assembled pudding until set.
  6. (Optional) Before serving, top with whipped cream mixed with sugar, beating until soft peaks form.
