Ingredients

  • 1 pkg cherry jello
  • whole graham crackers
  • 1/2 cup powdered sugar
  • 1/4 cup melted butter
  • 1 beaten egg yolk
  • 1/4 cup chopped nuts
  • 1/2 cup crushed drained pineapple

Instructions

  1. Prepare the cherry jello according to package instructions and let it cool until slightly thickened.
  2. Place a layer of whole graham crackers in a 9 x 9-inch pan.
  3. Spread a portion of the thickened jello over the graham crackers.
  4. In a bowl, combine powdered sugar, melted butter, beaten egg yolk, chopped nuts, and crushed, drained pineapple.
  5. Fold in stiffly beaten egg white into the mixture.
  6. Pour half of the pineapple mixture over the crackers and jello layer.
  7. Add another layer of graham crackers and repeat with remaining jello and pineapple mixture, creating 3 layers of crackers and 2 layers of filling.
  8. Pour the remaining thickened jello over the top layer of crackers.
  9. Whip the rest of the jello and spread it on top as the final layer.
  10. Chill in the refrigerator until set before serving.
