Graham Puffs
Light and crispy graham puffs with a sweet, buttery flavor, perfect as a dessert or snack filled with creamy pudding for a delightful treat.

- Combine graham cracker crumbs and flour in a bowl and set aside.
- In a saucepan over high heat, bring water, margarine, and salt to a boil until margarine melts.
- Remove from heat and quickly stir in the crumb mixture, beating vigorously until the mixture leaves the sides of the pan in a ball.
- Add eggs one at a time, beating thoroughly after each addition until well blended.
- Chill the pan in ice water until completely cooled.
- Drop the batter onto a greased cookie sheet in 6 mounds, swirling the tops.
- Bake in a preheated 400°F oven for about 40 minutes until golden brown.
- Turn off the oven and make a small slit in the side of each puff with a sharp knife.
- Leave the puffs in the oven with the door closed for an additional 30 minutes to dry out.
- Remove from oven and cool.
- Carefully cut off the tops of the puffs with a sharp knife.
- Fill each puff with your favorite creamy pudding filling.
