Light and crispy graham puffs with a sweet, buttery flavor, perfect as a dessert or snack filled with creamy pudding for a delightful treat.

Ingredients

  • 8 graham crackers (about 1/2 cup crumbs)
  • 3 tablespoons all-purpose flour
  • 2/3 cup water
  • 1/3 cup margarine
  • 1/8 teaspoon salt
  • 2 eggs

Instructions

  1. Combine graham cracker crumbs and flour in a bowl and set aside.
  2. In a saucepan over high heat, bring water, margarine, and salt to a boil until margarine melts.
  3. Remove from heat and quickly stir in the crumb mixture, beating vigorously until the mixture leaves the sides of the pan in a ball.
  4. Add eggs one at a time, beating thoroughly after each addition until well blended.
  5. Chill the pan in ice water until completely cooled.
  6. Drop the batter onto a greased cookie sheet in 6 mounds, swirling the tops.
  7. Bake in a preheated 400°F oven for about 40 minutes until golden brown.
  8. Turn off the oven and make a small slit in the side of each puff with a sharp knife.
  9. Leave the puffs in the oven with the door closed for an additional 30 minutes to dry out.
  10. Remove from oven and cool.
  11. Carefully cut off the tops of the puffs with a sharp knife.
  12. Fill each puff with your favorite creamy pudding filling.
