Ingredients

  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 3 eggs, separated and beaten
  • 1/2 cup lemon juice
  • 1 tablespoon lemon rind
  • 1 1/2 cups milk
  • 3 tablespoons flour

Instructions

  1. Cream the butter or margarine and sugar together.
  2. Add flour to the beaten egg yolks and mix in the lemon juice and lemon rind.
  3. Gradually add the milk while mixing.
  4. Fold in the beaten egg whites gently.
  5. Pour the mixture into a prepared baking dish.
  6. Bake at 400°F (200°C) for 10 minutes, then reduce temperature to 325°F (160°C) and bake for an additional 30 minutes.
