Ingredients

  • 1/4 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 cup buttermilk, scant
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries

Instructions

  1. Cream the shortening and sugar together, then add the egg and stir well.
  2. Mix together the flour, baking powder, and salt in a separate bowl.
  3. Add the dry ingredients alternately with the scant buttermilk to the creamed mixture.
  4. Shake 1 tablespoon of flour over the blueberries and fold them into the batter.
  5. Divide the batter into greased or paper-lined muffin cups.
  6. Bake at 400°F (200°C) for about 20 minutes until golden brown.
