Ingredients

  • 1 medium onion
  • 2 tsp. salt
  • 1 lb. dry pea beans
  • 1/2 c. brown sugar
  • 3 Tbsp. molasses
  • 1/2 lb. salt pork, washed and scored

Instructions

  1. Pick over beans and wash.
  2. Soak in water overnight.
  3. In morning, parboil beans until they boil; remove from heat.
  4. In a bean pot, place onion in bottom, then add drained beans (save liquid), salt, sugar, molasses and salt pork on top.
  5. Fill pot with bean water to cover salt pork.
  6. Bake at 350° for 1 hour, then at 300° for 5 to 6 hours, adding bean water, if needed.
