Ingredients

  • 2 cups yellow corn meal
  • 1/4 cup sugar
  • 1 1/2 teaspoons salt
  • 2 cups sour milk
  • 7/8 cup raw chopped apple
  • 2 tablespoons butter, melted
  • 2 eggs, beaten
  • 1 teaspoon soda
  • 1 tablespoon cold water

Instructions

  1. In the top of a double boiler, mix the corn meal, sugar, salt, sour milk, and melted butter.
  2. Set over hot water and cook for about 10 minutes. Allow to cool slightly.
  3. Add the beaten eggs, dissolved soda in cold water, and chopped apples to the mixture.
  4. Pour the batter into a greased 8 x 8 x 2-inch pan.
  5. Bake at 400°F (200°C) for about 25 minutes, or until done.
