Ingredients

  • 1/4 cup melted margarine
  • 1 cup sugar
  • 1 egg or 2 egg whites
  • 3 to 4 mashed overripe bananas
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup chopped nuts (optional)

Instructions

  1. Grease and flour 1 large or 2 small loaf bread pans.
  2. Melt the margarine.
  3. In a mixing bowl, combine the sugar and egg or egg whites.
  4. Add the mashed overripe bananas and mix well.
  5. Stir in the melted margarine.
  6. In a separate bowl, whisk together the flour, salt, and baking soda.
  7. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  8. Fold in chopped nuts if using.
  9. Pour the batter into the prepared loaf pan(s).
  10. Bake in a preheated oven at 350°F (175°C) for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
