Ingredients

  • 1 pkg. frozen chopped spinach
  • 1-2 pods garlic
  • 3 eggs
  • 1/2 c. shredded Parmesan cheese

Instructions

  1. Preheat oven to low broil with the rack in the lowest position.
  2. Saute thawed spinach and chopped garlic in olive oil until tender.
  3. Drain well and transfer the spinach mixture to a bowl.
  4. In a separate bowl, beat the eggs.
  5. Pour the beaten eggs over the spinach and garlic mixture.
  6. Heat olive oil in an oven-proof skillet until semi-hot.
  7. Pour the spinach and egg mixture into the skillet.
  8. Sprinkle grated Parmesan cheese on top.
  9. Place the skillet in the oven and broil until the top is browned.
  10. Remove from oven and cut into 6 slices like a pizza to serve.
