Ingredients

  • 2 green peppers, sliced
  • 2 potatoes, sliced
  • 1 onion, sliced
  • 1 or 2 squash
  • 1 1/2 to 2 cups spaghetti sauce
  • 1 1/2 to 2 cups grated cheese
  • 1 1/2 to 2 cups bread crumbs
  • oregano
  • parsley
  • garlic

Instructions

  1. Put oil in a pot and fry the sliced onion until half done.
  2. In a casserole dish, combine 1 1/2 cups spaghetti sauce, 3 tablespoons grated cheese, and bread crumbs.
  3. Layer sliced green peppers, potatoes, squash, and fried onions over the sauce in the casserole dish.
  4. Between layers, add small amounts of oregano, parsley, garlic, and basil.
  5. Repeat layering with remaining vegetables, sauce, cheese, and bread crumbs.
  6. Cover the casserole with foil and seal well.
  7. Bake at 350°F for 45 to 50 minutes or until potatoes are tender.
