Ingredients

  • 1 lb ground beef
  • 2 medium onions
  • 8 to 10 potatoes
  • 16 oz can red kidney beans
  • 1 tsp salt
  • 1/2 tsp pepper
  • 10.5 oz can tomatoes
  • 1 can tomato paste
  • 1.5 cups water

Instructions

  1. Brown ground beef and chopped onions in a skillet; drain excess fat.
  2. Transfer the cooked beef and onions into a stew pot.
  3. Cut tomatoes into small pieces and add them to the beef mixture.
  4. Peel and cut potatoes into bite-sized pieces.
  5. Add potatoes to the stew pot.
  6. Season with salt and pepper; cook covered on low to medium heat for 1 hour.
  7. Add kidney beans and cook until potatoes are tender. Add water if needed during cooking, or a small can of tomato paste with water to adjust consistency.
