Ingredients

  • 1 1/2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 20 ounces crushed pineapple
  • 1/2 cup pecan pieces
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter
  • 1 cup evaporated milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9 x 13-inch pan.
  2. Mix together 1 1/2 cups sugar, flour, baking soda, salt, eggs, and crushed pineapple in a bowl.
  3. Pour the batter into the prepared pan.
  4. Sprinkle pecan pieces and brown sugar evenly over the top of the batter.
  5. Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Meanwhile, combine 1/2 cup sugar, butter, evaporated milk, and vanilla in a saucepan.
  7. Bring the mixture to a boil, stirring constantly, and cook for 1 minute.
  8. Pour the warm caramel glaze over the hot cake immediately after removing from the oven.
