Ingredients

  • 1 cup milk
  • 2 tablespoons sugar
  • 1/4 cup margarine
  • 2 teaspoons salt
  • 1 1/2 cups warm water
  • 2 packages dry yeast
  • 1 cup instant potato flakes

Instructions

  1. Heat together milk and margarine to scalding; do not boil. Cool to lukewarm.
  2. Dissolve yeast in warm water in a large bowl. Add cooled milk, salt, and sugar.
  3. Stir in potato flakes and enough flour to make a soft dough.
  4. Knead on a floured surface for 8 to 10 minutes until smooth and satiny.
  5. Cover and let rise in a warm place until doubled in bulk, about 45 to 60 minutes.
  6. Punch down the dough and divide in half.
  7. Shape each portion into a loaf.
  8. Place the loaves seam side down in well-greased 9 x 5-inch loaf pans.
  9. Let rise again for 30 to 45 minutes.
  10. Bake in a 375°F oven for 45 to 50 minutes, until golden brown.
