Ingredients

  • 2 c. sweet potatoes, cooked and mashed
  • 3/4 c. sugar
  • 1 stick butter, melted
  • 8 tsp. baking powder
  • 1/2 tsp. salt
  • 3 c. all-purpose flour

Instructions

  1. Sift together baking powder, salt, and flour; set aside.
  2. Mix together cooked and mashed sweet potatoes, sugar, and melted butter.
  3. Add the sweet potato mixture to the dry ingredients and combine.
  4. Turn the dough out onto a heavily floured surface and knead 4 or 5 times, adding flour as needed.
  5. Roll dough to 1/2-inch thickness and cut with a 2-inch biscuit cutter.
  6. Place the biscuits on an ungreased cookie sheet, allowing space for golden crusts.
  7. Bake at 375°F (190°C) for 15 minutes until golden.
