Ingredients

  • 4 eggs, separated
  • 1/4 cup sugar
  • 1 teaspoon lemon extract
  • 1 tablespoon vegetable oil
  • 1/2 cup sugar
  • 2/3 cup cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • powdered sugar
  • Lemon Filling (recipe follows)
  • 1/2 cup coconut
  • 1/2 teaspoon water

Instructions

  1. Beat egg yolks until light and fluffy.
  2. Gradually add 1/4 cup sugar to the egg yolks, then stir in lemon extract and vegetable oil; set aside.
  3. Beat egg whites until foamy.
  4. Gradually add 1/2 cup sugar to the egg whites and beat until stiff peaks form.
  5. Gently fold the yolk mixture into the egg whites.
  6. Sift dry ingredients (cake flour, baking powder, salt) and fold into the egg mixture.
