Ingredients

  • 1 baked pie crust
  • 1 envelope unflavored gelatin
  • 3/4 cup sugar
  • 1/2 teaspoon grated grapefruit rind
  • 3 eggs
  • 1 cup fresh grapefruit juice
  • 1/2 pint heavy cream

Instructions

  1. Combine gelatin, 1/2 cup sugar, and grated grapefruit rind in a saucepan.
  2. Beat egg yolks, then add grapefruit juice and stir into the gelatin mixture.
  3. Cook over low heat, stirring constantly, until gelatin dissolves and mixture thickens slightly. Chill.
  4. Stir occasionally until the mixture mounds when dropped from a spoon.
  5. Beat egg whites until frothy.
  6. Gradually beat in 1/4 cup sugar, beating until stiff.
  7. Fold the beaten egg whites into the gelatin mixture.
  8. Fold in half of the whipped cream.
  9. Turn the mixture into the baked pie crust.
  10. Chill until set, then top with the remaining whipped cream.
