Grapefruit Congealed Salad

- Peel and section the grapefruit; sprinkle 9 tablespoons of cold water over 3 packages of Knox unflavored gelatine.
- Dissolve 3/4 cup of sugar in 1 cup of boiling water.
- Mix the dissolved sugar with the gelatine until well combined.
- Add 3 cups of sectioned grapefruit and 1 cup of grapefruit juice to the gelatine mixture.
- Pour half of the mixture into a 9-inch square dish.
- Congeal the mixture in the refrigerator until firm.
- Leave the remaining half at room temperature for serving or further use.
