Ingredients

  • 4 medium pink grapefruit, peeled and sectioned
  • 3 packages Knox gelatine, unflavored
  • 3/4 cup sugar
  • 1 cup grapefruit juice
  • 1 package (8 oz.) cream cheese
  • 1/2 cup mayonnaise
  • 1/2 cup chopped nuts

Instructions

  1. Peel and section the grapefruit; sprinkle 9 tablespoons of cold water over 3 packages of Knox unflavored gelatine.
  2. Dissolve 3/4 cup of sugar in 1 cup of boiling water.
  3. Mix the dissolved sugar with the gelatine until well combined.
  4. Add 3 cups of sectioned grapefruit and 1 cup of grapefruit juice to the gelatine mixture.
  5. Pour half of the mixture into a 9-inch square dish.
  6. Congeal the mixture in the refrigerator until firm.
  7. Leave the remaining half at room temperature for serving or further use.
