Ingredients

  • 3 cups flour
  • 3 cups sugar
  • 1 tablespoon grated orange rind
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/3 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/8 teaspoon ground cloves
  • 1 cup vegetable shortening
  • 1 cup orange juice
  • 2/3 cup light molasses
  • 3 large eggs
  • 1 1/2 cups fresh or frozen cranberries
  • 1/2 cup shredded carrots
  • 3/4 cup chopped pecans

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour a 10-inch tube pan.
  3. In a bowl, mix together flour, sugar, orange rind, baking powder, baking soda, cinnamon, salt, ginger, allspice, and cloves.
  4. Add vegetable shortening, orange juice, and molasses to the dry ingredients.
  5. Beat for 2 minutes at medium speed; mix thoroughly.
  6. Add eggs and beat for 2 minutes.
  7. Stir in cranberries, shredded carrots, and chopped pecans.
  8. Pour the batter into the prepared pan.
  9. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
