Grapefruit Wedge Salad
A refreshing grapefruit wedge salad with apricots and pecans, featuring a light Jell-O dressing. Perfect for summer gatherings or a bright, fruity side dish.

- Cut the grapefruit in halves and remove pulp from the rind.
- Cut enough segments to make 1 cup.
- Squeeze enough juice for 1 cup and add to apricot juice drained from the can, totaling 2 cups.
- Heat the combined juice and add to the Jell-O and sugar. Cool slightly.
- Add the grapefruit segments, mashed apricots, and chopped pecans to the mixture.
- Fill the grapefruit rind halves with the Jell-O mixture and let cool.
- To serve, cut each filled half into quarters.
- Serve on fruit leaves or English ivy leaves. Poppy seed dressing may be used if desired.
