Grapefruit Wedge Salad

A refreshing grapefruit wedge salad with apricots and pecans, featuring a light Jell-O dressing. Perfect for summer gatherings or a bright, fruity side dish.

Ingredients

  • 2 to 3 ruby red grapefruits
  • 1 large can apricots
  • 1/2 cup chopped pecans
  • 3 oz. apricot Jell-O
  • 1 tablespoon sugar

Instructions

  1. Cut the grapefruit in halves and remove pulp from the rind.
  2. Cut enough segments to make 1 cup.
  3. Squeeze enough juice for 1 cup and add to apricot juice drained from the can, totaling 2 cups.
  4. Heat the combined juice and add to the Jell-O and sugar. Cool slightly.
  5. Add the grapefruit segments, mashed apricots, and chopped pecans to the mixture.
  6. Fill the grapefruit rind halves with the Jell-O mixture and let cool.
  7. To serve, cut each filled half into quarters.
  8. Serve on fruit leaves or English ivy leaves. Poppy seed dressing may be used if desired.
