Ingredients

  • 6 potatoes
  • 8 oz. sour cream
  • 2 c. grated Cheddar cheese
  • 1/2 stick melted butter
  • 1 tsp. salt
  • 1/3 c. chopped onion
  • paprika

Instructions

  1. Heat oven to 350°F (175°C).
  2. Boil potatoes in jackets until tender, then cool, peel, and grate.
  3. Mix sour cream, grated Cheddar cheese, melted butter, salt, and chopped onion.
  4. Add the mixture to the grated potatoes and stir well.
  5. Place the mixture in a greased 2-quart casserole dish.
  6. Sprinkle with paprika on top.
  7. Bake at 350°F (175°C) for 30 minutes until golden and bubbly.
