Ingredients

  • 3 medium baking potatoes, scrubbed
  • 1/4 c. chopped onion
  • 2 Tbsp. butter
  • 2 Tbsp. oil
  • 1/4 tsp. salt
  • black pepper to taste

Instructions

  1. Grate potatoes, skin and all, on a medium grater.
  2. Add chopped onion to the grated potatoes and mix.
  3. Melt butter and oil together in a skillet.
  4. When the butter and oil are hot, spread the potato mixture to a depth of about 1/4 inch.
  5. Cover and cook over medium‑low heat until the bottom is crisp and brown.
  6. Flip the potatoes over and brown the other side.
  7. Season with salt and pepper to taste.
  8. Cut into quarters and serve immediately.
