- Grate potatoes, skin and all, on a medium grater.
- Add chopped onion to the grated potatoes and mix.
- Melt butter and oil together in a skillet.
- When the butter and oil are hot, spread the potato mixture to a depth of about 1/4 inch.
- Cover and cook over medium‑low heat until the bottom is crisp and brown.
- Flip the potatoes over and brown the other side.
- Season with salt and pepper to taste.
- Cut into quarters and serve immediately.
