Ingredients

  • 2 lb. fresh fish of choice, whole, cleaned or filleted
  • 1 lemon or lime
  • 1 onion
  • 1 large tomato
  • salt and pepper
  • 2 Tbsp. snipped parsley
  • 2 Tbsp. olive oil, oleo or butter

Instructions

  1. Arrange the fish in a 12 x 7 1/2 x 2-inch baking dish; turn under thin edges.
  2. Season with salt and pepper as desired.
  3. Slice the lemon or lime and onion thinly.
  4. Place citrus slices over the fish.
  5. Separate the onion into rings and place over the fish and citrus.
