Instructions

  1. Remove stems and tough outer leaves from the artichokes.
  2. Use scissors to trim the sharp tips remaining on the artichoke leaves.
  3. Stand the artichokes upright in a deep saucepan large enough to hold them snugly.
  4. Add 5 tablespoons salt, 3 tablespoons lemon juice, and 1 tablespoon olive oil to 2 to 3 inches of water in the saucepan.
  5. Cover and boil gently for 45 minutes until the artichokes are tender or the base can be pierced with a fork.
  6. Lift out the cooked artichokes and drain on paper towels.
  7. Hold the bottom of each artichoke and press firmly on a work surface to loosen the leaves.
  8. Turn the artichokes upside down to drain.
