Ingredients

  • 1 package northern white beans
  • 2 chopped onions
  • 1 chopped green pepper
  • 2 chopped carrots
  • 3 crushed chili peppers
  • 1 large can tomatoes
  • 2 oz. pure olive oil
  • salt and pepper to taste

Instructions

  1. Wash the northern white beans with soda; rinse well.
  2. Put beans, chopped onions, chopped green pepper, chopped carrots, and crushed chili peppers in an 8-quart kettle.
  3. Fill the kettle with cold water, 2 inches from the top.
  4. Bring the mixture to a boil, then add the large can of tomatoes and olive oil.
  5. Cook on medium heat for 5 hours.
  6. Serve hot with bread or French garlic bread.
