Ingredients

  • 4 medium-sized tomatoes
  • 2/3 cup olive oil
  • 2 medium cucumbers (about 10 oz each)
  • 1/4 cup red wine vinegar
  • 1 1/2 teaspoons salt
  • 1 large yellow pepper
  • 1/4 teaspoon pepper
  • 1 medium red onion
  • 1 (12 oz) loaf Italian bread
  • 1/4 cup lightly packed chopped basil leaves
  • 1/2 cup Mediterranean olives
  • 2 tablespoons capers, drained
  • 1 garlic clove, very finely chopped
  • Fresh basil sprig for garnish

Instructions

  1. About 30 minutes before serving, cut tomatoes, cucumbers, yellow pepper, and red onion into bite-sized pieces. Place vegetables in a large bowl.
  2. Stir in chopped basil leaves, capers, garlic, olive oil, red wine vinegar, salt, and pepper.
