Peasant Salad

Ingredients
- 4 medium-sized tomatoes ⓘ
- 2/3 cup olive oil ⓘ
- 2 medium cucumbers (about 10 oz each) ⓘ
- 1/4 cup red wine vinegar ⓘ
- 1 1/2 teaspoons salt ⓘ
- 1 large yellow pepper
- 1/4 teaspoon pepper ⓘ
- 1 medium red onion ⓘ
- 1 (12 oz) loaf Italian bread ⓘ
- 1/4 cup lightly packed chopped basil leaves ⓘ
- 1/2 cup Mediterranean olives ⓘ
- 2 tablespoons capers, drained ⓘ
- 1 garlic clove, very finely chopped ⓘ
- Fresh basil sprig for garnish ⓘ
Instructions
- About 30 minutes before serving, cut tomatoes, cucumbers, yellow pepper, and red onion into bite-sized pieces. Place vegetables in a large bowl.
- Stir in chopped basil leaves, capers, garlic, olive oil, red wine vinegar, salt, and pepper.
