Greek Omelet For Two

Ingredients

  • 10 oz. frozen chopped spinach
  • 1 oz. crumbled Feta cheese
  • 1/4 cup cream-style cottage cheese
  • 2 teaspoons dried mint leaves, crushed
  • dash of pepper
  • 3 or 4 eggs
  • 1 tablespoon butter or margarine

Instructions

  1. In a medium saucepan, cook the frozen chopped spinach according to the package directions; drain well.
  2. In the same pan, combine the cooked spinach, crumbled feta cheese, cottage cheese, crushed dried mint leaves, and a dash of pepper.
  3. Heat the mixture through over low heat, stirring occasionally.
  4. In a separate bowl, beat 3 or 4 eggs.
  5. Melt 1 tablespoon of butter or margarine in a skillet over medium heat.
  6. Pour the beaten eggs into the skillet and cook until set.
  7. Add the spinach and cheese mixture on top of one side of the omelet, fold it over, and serve hot.
