- In a medium saucepan, cook the frozen chopped spinach according to the package directions; drain well.
- In the same pan, combine the cooked spinach, crumbled feta cheese, cottage cheese, crushed dried mint leaves, and a dash of pepper.
- Heat the mixture through over low heat, stirring occasionally.
- In a separate bowl, beat 3 or 4 eggs.
- Melt 1 tablespoon of butter or margarine in a skillet over medium heat.
- Pour the beaten eggs into the skillet and cook until set.
- Add the spinach and cheese mixture on top of one side of the omelet, fold it over, and serve hot.
