Green Bean Frittata

Ingredients

  • 1 chopped green pepper
  • olive oil
  • 1/2 c. Parmesan cheese
  • 3/4 c. bread crumbs
  • 1/4 tsp. salt and pepper
  • 1/4 c. olive oil
  • 1 chopped onion
  • 3 (1 lb.) cans cut green beans
  • 3 cloves garlic, chopped
  • 3 eggs, beaten
  • pinch of sage and oregano

Instructions

  1. Wash, drain, string and trim ends of green beans and break/cut into 2-inch pieces.
  2. Pack tightly into hot canning jars, leaving 1-inch headspace.
  3. Add 1 teaspoon salt to each quart.
  4. Pour in boiling water, covering beans; but leaving 1-inch headspace.
  5. Put on caps.
  6. Process in pressure cooker at 10 pounds pressure, pints 20 minutes and quarts 25 minutes.
