Ingredients

  • 1 Tbsp. olive oil
  • 8 oz. chourico (hot Portuguese sausage)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 c. peeled, seeded and chopped plum tomatoes
  • 1/2 c. wine (red or white)
  • 6 c. fresh green beans, cut in 1 1/2-inch pieces
  • 1 bay leaf
  • salt to taste

Instructions

  1. In a large Teflon-coated frypan, heat the olive oil over medium heat.
  2. Cook the chourico sausage, chopped onion, and minced garlic until the sausage is cooked through and the vegetables are softened and begin to brown.
  3. Remove the chourico mixture from the pan and set aside.
  4. Add the chopped plum tomatoes, wine, bay leaf, salt, and black pepper to the pan and cook until the tomatoes are soft and the flavors meld, about 10 minutes.
  5. Return the cooked chourico mixture to the pan and add the green beans.
  6. Cook for an additional 5-10 minutes until the green beans are tender but still vibrant.
