- Cook the chourico sausage, chopped onion, and minced garlic until the sausage is cooked through and the vegetables are softened and begin to brown.
- Remove the chourico mixture from the pan and set aside.
- Add the chopped plum tomatoes, wine, bay leaf, salt, and black pepper to the pan and cook until the tomatoes are soft and the flavors meld, about 10 minutes.
- Return the cooked chourico mixture to the pan and add the green beans.
- Cook for an additional 5-10 minutes until the green beans are tender but still vibrant.
