  • 2 lb. cabbage or Chinese cabbage, cut into 1-inch pieces
  • 2 red chili peppers, minced or 2 Tbsp. dried chili powder
  • 1 clove garlic, minced
  • 1 stalk green onion, chopped
  • 1 Tbsp. sugar
  • 1/2 tsp. paprika
  • 1 small carrot, shredded (optional)

Instructions

  1. Soak cabbage overnight in 1 quart of water with 1/4 cup of salt.
  2. Next morning, drain all but 1/2 cup of water.
  3. Add minced red chili peppers or chili powder, minced garlic, chopped green onion, sugar, paprika, and shredded carrot if using, then mix well.
  4. Press the mixture tightly into quart jars and cover.
  5. Let stand at room temperature for 4 days to ferment.
  6. Refrigerate and serve cold.
