Ingredients

  • 1/2 lb. green beans
  • salt to taste
  • 3 Tbsp. olive oil
  • 1 Tbsp. chopped parsley
  • freshly ground pepper to taste
  • 2 tsp. red wine vinegar
  • 12 thin sliced red onion rings
  • 1 tsp. Dijon mustard

Instructions

  1. Cook whole green beans in boiling water for about 5 minutes.
  2. Drain the beans and run cold water over them to stop cooking.
  3. In a bowl, whisk together parsley, red wine vinegar, Dijon mustard, olive oil, salt, and freshly ground pepper.
  4. Put the cooked beans in a serving dish.
  5. Garnish with thin sliced red onion rings.
  6. Spoon the vinaigrette sauce over the beans and onions, then toss lightly to combine.
