Ingredients

  • 2 lb. green beans
  • 1 lb. salt pork
  • 6 medium potatoes

Instructions

  1. Cover salt pork with water and cook for 20 minutes.
  2. Break green beans into 1/2-inch pieces and add to the pot.
  3. Cover with water and cook for 1 1/2 hours, adding more water if necessary to keep beans covered.
  4. Add potatoes and enough water to cover the vegetables.
  5. Cook for another 30 minutes or until potatoes are done.
  6. Serve hot.
