Ingredients

  • 1 lb smoked sausage
  • 1 medium onion
  • 1 big can tomato sauce
  • 1 can water
  • 4 or 5 peeled potatoes
  • basil to taste
  • garlic powder to taste
  • 2 or 3 cans green beans, drained

Instructions

  1. Cut smoked sausage into 1/2-inch pieces.
  2. Sauté sliced onion with sausage until onions are translucent.
  3. Add tomato sauce to the skillet.
  4. Pour in one can of water or more, as needed.
  5. Add basil and garlic powder to taste.
  6. Cut peeled potatoes into bite-size pieces and add to the sausage mixture.
  7. Simmer until potatoes are about half cooked.
  8. Add drained green beans to the mixture.
  9. Stir and simmer, covered, until green beans are heated through.
  10. If the mixture looks dry, add more water as needed and continue simmering.
