- In a saucepan, combine cream of chicken soup, milk, and Velveeta cheese and heat over medium heat until the cheese melts.
- Add green chilies to the sauce mixture and set aside.
- Brown the ground meat with chopped onion in a skillet, then drain excess fat.
- Add chili powder, cumin, and optional salt and pepper to the meat mixture and mix well.
- Warm the tortillas in the microwave or in a warm skillet, one at a time.
- Place some of the meat mixture and grated Cheddar cheese in each tortilla, then roll up.
- Arrange the filled tortillas in a long baking dish and pour the sauce over all.
- Top with additional Cheddar and Monterey Jack cheeses.
- Bake at 350°F (175°C) until hot and bubbly, about 30 minutes.
