Green Beef Enchiladas

Creamy, cheesy green beef enchiladas feature tender meat, melted cheeses, and a flavorful green chili sauce, perfect for hearty family dinners or casual gatherings.

Ingredients

  • 1 can cream of chicken soup
  • 1 small can green chilies
  • 1/2 lb Velveeta cheese
  • 1 can milk
  • 1 lb ground meat
  • 2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 cup onion
  • 1/2 lb grated cheese
  • 12 corn tortillas
  • Cheddar cheese
  • Monterey Jack cheese

Instructions

  1. In a saucepan, combine cream of chicken soup, milk, and Velveeta cheese and heat over medium heat until the cheese melts.
  2. Add green chilies to the sauce mixture and set aside.
  3. Brown the ground meat with chopped onion in a skillet, then drain excess fat.
  4. Add chili powder, cumin, and optional salt and pepper to the meat mixture and mix well.
  5. Warm the tortillas in the microwave or in a warm skillet, one at a time.
  6. Place some of the meat mixture and grated Cheddar cheese in each tortilla, then roll up.
  7. Arrange the filled tortillas in a long baking dish and pour the sauce over all.
  8. Top with additional Cheddar and Monterey Jack cheeses.
  9. Bake at 350°F (175°C) until hot and bubbly, about 30 minutes.
