A hearty green bell pepper casserole featuring seasoned ground beef, fresh tomatoes, corn, and topped with buttery bread cubes, perfect for a comforting family meal.

Ingredients

  • 2 green bell peppers
  • 1 small onion
  • 1 lb ground beef
  • 2 Tbsp fat
  • 2 medium tomatoes
  • 1 can whole kernel corn
  • Salt and pepper to taste

Instructions

  1. Halve or quarter green peppers and remove seeds.
  2. Parboil the peppers for 5 minutes, then drain.
  3. Brown chopped onion and ground beef in fat.
  4. Add chopped tomatoes, corn, salt, and pepper to the meat mixture.
  5. Arrange the green peppers around the edge of a casserole dish.
  6. Pour the meat mixture into the center of the pepper ring.
  7. Bake the casserole at 350°F (175°C) for 1 hour.
  8. Top with 4 to 5 slices of white bread, cubed and coated with melted butter.
  9. Brown the bread in a 425°F (220°C) oven for 10 to 15 minutes.
