Green Enchilada Sauce

A vibrant, tangy green enchilada sauce made from roasted green tomatoes and garlic, perfect for adding bold flavor to Mexican dishes and suitable for vegetarian meals.

Ingredients

  • 2 sinks full green tomatoes
  • 2 heads garlic
  • 1 handful fresh ground cumin
  • salt to taste
  • red chili powder to taste

Instructions

  1. Wash tomatoes; quarter and remove all seeds.
  2. Peel garlic.
  3. Put all ingredients in a large pot with a quart of water.
  4. Watch the pot so the tomatoes won't stick.
  5. Add water as needed during cooking.
  6. When all tomatoes are tender, remove from stove and cool.
  7. Run everything through a blender until smooth.
  8. Return the blended mixture to the stove and bring to a boil.
  9. Pour into quart jars and process for 45 minutes.
