- Combine cream of chicken soup, evaporated milk, and Velveeta cheese in the top of a double boiler.
- Heat until the cheese melts and the mixture is smooth.
- Add chopped green chilies and chopped pimientos to the sauce and set aside.
- Brown the ground beef in a skillet, seasoning with cumin powder and pepper if desired.
- Layer torn flour tortillas in a greased baking dish.
- Add a layer of cooked ground beef, chopped onions, Velveeta sauce, and grated Longhorn cheese.
- Repeat the layers until all ingredients are used, ending with a cheese layer on top.
- Cover the dish with foil and bake at 350°F (175°C) for 30 minutes.
- Serve hot and enjoy!
