Ingredients

  • 1 can cream of chicken soup
  • 1 cup evaporated milk
  • 1 small can chopped green chilies
  • 1 large jar chopped pimientos
  • 1/2 pound Velveeta cheese
  • 1 pound ground beef
  • 1 cup chopped onion
  • 1/2 pound grated Longhorn cheese
  • 12 flour tortillas

Instructions

  1. Combine cream of chicken soup, evaporated milk, and Velveeta cheese in the top of a double boiler.
  2. Heat until the cheese melts and the mixture is smooth.
  3. Add chopped green chilies and chopped pimientos to the sauce and set aside.
  4. Brown the ground beef in a skillet, seasoning with cumin powder and pepper if desired.
  5. Layer torn flour tortillas in a greased baking dish.
  6. Add a layer of cooked ground beef, chopped onions, Velveeta sauce, and grated Longhorn cheese.
  7. Repeat the layers until all ingredients are used, ending with a cheese layer on top.
  8. Cover the dish with foil and bake at 350°F (175°C) for 30 minutes.
  9. Serve hot and enjoy!
