Ingredients

  • 4 whole chicken breasts
  • 12 corn tortillas
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup milk
  • 1 onion
  • 2 cans Ortega green chili salsa
  • 1 pound Cheddar cheese

Instructions

  1. Wrap each chicken breast in foil.
  2. Bake the chicken breasts in a 400°F oven for 1 hour.
  3. Cook and save the juice from the chicken.
  4. Bone the chicken and cut into large pieces.
  5. Cut the tortillas into 1-inch strips.
  6. Grease the bottom and sides of an oblong Pyrex casserole dish.
  7. Arrange the round sides of tortillas around the edge of the dish.
  8. Place half of the tortilla strips on the bottom of the dish.
  9. Mix together the cream of mushroom soup, cream of chicken soup, milk, chopped onion, and green chili salsa.
  10. Pour the chicken juice into the bottom of the dish.
  11. Layer half of the chicken pieces over the bottom, then add half of the sauce.
  12. Repeat the layers, starting with the tortilla strips.
  13. Sprinkle grated Cheddar cheese on top.
  14. Let the casserole stand in the refrigerator overnight.
  15. Bake for 1.5 hours at 300°F before serving.
