Ingredients

  • 6 medium baking potatoes
  • 3 stalks broccoli (about 1 lb.)
  • 3/4 cup grated cheese
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup milk

Instructions

  1. Preheat oven to 400°F.
  2. Scrub potatoes and make shallow slits around the middle as if cutting them in half lengthwise.
  3. Bake the potatoes until done, approximately 45 to 60 minutes, depending on size.
  4. While potatoes are baking, steam or blanch the broccoli until tender.
  5. Once potatoes are baked, carefully remove them from the oven and let cool slightly.
  6. Cut the potatoes in half lengthwise and scoop out some of the insides into a bowl.
  7. Mix the potato insides with grated cheese, salt, pepper, and milk.
  8. Refill the potato shells with the mixture, top with additional cheese if desired.
  9. Return to the oven and bake until cheese is melted and bubbly, about 10 minutes.
