Ingredients

  • 1 Tbsp. vegetable oil
  • 1 garlic clove, minced
  • 2 c. cooked, diced chicken
  • 1 pkg. Azteca flour tortillas
  • 1 1/2 c. shredded Monterey Jack or Cheddar cheese
  • 1/2 c. chopped onion
  • 1 Tbsp. margarine
  • black olives (optional)

Instructions

  1. In a skillet, heat vegetable oil.
  2. Cook chopped onion and minced garlic until tender.
  3. Add cooked, diced chicken to the skillet and heat for 3 minutes.
  4. Remove the mixture from the pan into a bowl.
  5. Heat tortillas according to the package instructions.
  6. Divide the chicken mixture onto the center of each tortilla.
  7. Top with shredded cheese and optional ingredients like black olives, tomato, and green chilies.
  8. Fold tortillas in half.
  9. Melt margarine in the same skillet.
  10. Grill tacos on each side for 2 to 3 minutes or until cheese melts and tacos are golden.
