Ingredients

  • 4 whole dressed trout
  • 4 Tbsp. butter
  • 4 Tbsp. chopped onion
  • 1 lemon sliced into four pieces
  • 8 to 12 slices bacon partially cooked
  • salt
  • pepper

Instructions

  1. Rinse and pat dry each whole trout.
  2. Salt and pepper each cavity of the trout and stuff with 1 tablespoon butter, 1 tablespoon chopped onion, and 1 slice lemon.
  3. Wrap each trout with 2 or 3 slices of partially cooked bacon in aluminum foil.
  4. Place on grill 3 to 4 inches above coals.
  5. Cook for 10 minutes per side or until bacon is crisp and trout flakes easily in the thickest part of the flesh.
  6. Remove from grill and serve immediately.
