Ingredients

  • 2 cups dry grits
  • 1 stick butter
  • 3 eggs
  • 2 cups Cheddar cheese grated
  • 1/2 cup salsa or 1 can Ro-Tel tomatoes
  • 2 tablespoons onion finely chopped
  • 1/2 garlic clove chopped

Instructions

  1. Cook the grits in chicken broth according to package instructions.
  2. Melt butter in the hot cooked grits.
  3. Add beaten eggs, grated cheddar cheese, salsa or Ro-Tel tomatoes, finely chopped onion, and chopped garlic to the grits.
  4. Mix lightly and pour into a buttered casserole dish.
  5. Bake for 25 to 30 minutes at 250°F.
