Ingredients

  • 1 lb. bacon, chopped into small pieces
  • 3 garlic cloves, chopped
  • 1 cup chopped green onions
  • 3 eggs, slightly beaten
  • 3 cups cooked, cooled rice
  • 1 cup ham, diced thinly
  • 1 can broken or chopped shrimp

Instructions

  1. Fry bacon until crisp.
  2. Remove bacon and pour off half the bacon fat.
  3. Fry garlic until fragrant, then remove and discard.
  4. Fry green onions in the same fat until tender.
  5. Remove green onions and add to bacon.
  6. Spread beaten eggs on the bottom of the pan as if preparing to make an omelet, then remove to a plate.
  7. Add cooled cooked rice to the pan and stir until all grains are coated with grease and not sticking together.
  8. Add bacon, green onions, and diced ham, then mix well, scraping the bottom of the pan to prevent sticking.
  9. Turn heat to low and add chopped egg pieces.
  10. Add canned shrimp and stir to combine.
  11. Remove from heat and serve.
