Ingredients

  • 1 cup boiling milk
  • 3 cups milk
  • 2 cups buttermilk
  • 1/4 cup raisins
  • 1/4 cup sugar
  • flour
  • cream

Instructions

  1. Bring three cups of milk to a rolling boil.
  2. Pour in buttermilk and let it simmer for 15 minutes, lifting the curds now and then.
  3. Pour off the whey and add raisins, cooking until only a small amount of whey remains in the pan.
  4. Add one cup of boiling milk and simmer.
  5. Finish by adding sugar and thickening the mixture.
  6. Cook until the flour is fully cooked. If the mixture is too thin, add a little dry flour and cook a bit more.
  7. Pour the mixture onto a platter and sprinkle with cinnamon.
