Halibut Quiche

- Prepare the pastry for a 9-inch single crust pie and line a pie plate with it.
- Place 1 cup of flaked, precooked halibut in the prepared pie crust.
- Shred the Swiss cheese and chop the onion, then sprinkle these over the halibut.
- Beat the eggs lightly and beat in the half and half, milk, salt, and pepper.
- Pour the egg mixture over the ingredients in the pie plate.
- Bake in a 425°F oven for 15 minutes.
- Reduce the oven temperature to 300°F and continue baking for 30 minutes, or until a knife inserted comes out clean.
- Remove from the oven and let stand for 10 minutes before cutting.
