Ingredients

  • 9-inch single crust pie pastry
  • 1 cup flaked, precooked halibut
  • 1 cup Swiss cheese, shredded
  • 1/2 cup onion, chopped
  • 4 eggs
  • 1 cup half and half
  • 1 cup milk

Instructions

  1. Prepare the pastry for a 9-inch single crust pie and line a pie plate with it.
  2. Place 1 cup of flaked, precooked halibut in the prepared pie crust.
  3. Shred the Swiss cheese and chop the onion, then sprinkle these over the halibut.
  4. Beat the eggs lightly and beat in the half and half, milk, salt, and pepper.
  5. Pour the egg mixture over the ingredients in the pie plate.
  6. Bake in a 425°F oven for 15 minutes.
  7. Reduce the oven temperature to 300°F and continue baking for 30 minutes, or until a knife inserted comes out clean.
  8. Remove from the oven and let stand for 10 minutes before cutting.
