Halloween Meatballs

Ingredients

  • 1 None day old bread roll
  • 1/2 lb lean ground beef
  • 1 medium egg, beaten
  • 2 tbsp fresh chopped parsley
  • 1 None onion, peeled and finely chopped
  • 4 None mini mozzarella balls, halved
  • 4 None stuffed olives
  • 1 tbsp tomato ketchup
  • None None lettuce leaves, to serve

Instructions

  1. Soak the bread in a little cold water for 5 mins then squeeze out the excess water. Break up the soaked bread roll in a bowl and mix with the beef, egg, parsley and onion. Season with salt and freshly ground black pepper and mix well. Divide and shape into four large meatballs.
  2. Heat the oil in a large non-stick pan and saute the meatballs over medium heat for 10-15 mins, turning occasionally until browned and cooked through. Remove and drain on paper towels.
  3. Place the meatballs on a serving plate. Use the halved mini mozzarella balls and sliced olives to create eyes on each meatball. Pipe tomato ketchup to resemble mouths. Garnish with lettuce leaves.
