Ingredients

  • 1 medium head cabbage
  • 1 lb lean ground beef
  • 1/2 cup rice
  • 1 teaspoon garlic powder
  • 1 egg
  • 1 can tomato soup
  • 1 large can tomatoes
  • Salt and pepper to taste

Instructions

  1. Choose a medium head of cabbage that is not too solid; pare around the core and remove the core.
  2. In a large pot, bring water to a boil; preboil the cabbage until leaves loosen and wilt.
  3. Remove the wilted leaves as they fall off; cool them.
  4. Use a paring knife to remove the thick center ridge from each leaf.
  5. Mix the ground beef, rice, salt, pepper, garlic powder, and egg together; place a heaping tablespoon of the mixture into the center of each leaf and roll up. Shred the remaining cabbage leaves and set aside.
  6. In the bottom of a large pot, lay the rolled cabbage leaves on top of the shredded cabbage.
  7. Cover the rolled cabbage with a mixture of tomato soup and canned tomatoes.
  8. Bring to a boil, then reduce heat and simmer for about 1 hour until cooked through.
