Creamy ham and potato scallops feature tender layers of sliced potatoes, ham, and onions baked in a comforting mushroom sauce, topped with crispy fried onions—perfect for family dinners.

Ingredients

  • 3 medium potatoes
  • 3/4 lb ham
  • 2 1/2 tsp flour
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1/2 cup chopped onion
  • 2 Tbsp butter
  • salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice the potatoes thinly.
  3. Layer sliced potatoes and chopped onions in a buttered casserole dish.
  4. Brown the ham in a skillet, then layer it on top of the potatoes and onions.
  5. In the same skillet, melt butter over medium heat.
  6. Add flour to the melted butter and stir well.
  7. Pour in the cream of mushroom soup and milk, stirring until smooth.
  8. Simmer the sauce until slightly thickened.
  9. Pour the sauce over the layered potatoes and ham.
  10. Bake uncovered in the preheated oven for 1 hour.
  11. Top with French fried onions before serving.
