Ingredients

  • 1 lb. red beans
  • 2 qt. water
  • 1 lb. ham hock
  • 1 onion, chopped
  • 1 red pepper pod
  • 1 minced garlic clove

Instructions

  1. Soak the red beans overnight in water.
  2. Drain the soaked beans.
  3. Place the beans in a large pot and cover with water.
  4. Bring the water to a boil.
  5. Add ham hock, chopped onion, red pepper pod, and minced garlic to the pot.
  6. Season with salt and pepper to taste.
  7. Reduce the heat to low.
  8. Simmer for 2 hours or until the beans are tender.
