Ingredients

  • 4 Tbsp. butter
  • 1 onion
  • 1 c. milk
  • 3/4 c. flour
  • 1/2 tsp. salt
  • 1 Tbsp. sherry wine
  • 2 c. ground ham
  • 2 eggs
  • 1 c. cracker crumbs
  • 1/4 tsp. ground pepper

Instructions

  1. Cook together the milk, butter, onion, flour, salt, and pepper to make a creamy sauce, then add the sherry wine and ground ham. Cook slowly.
  2. Pour the mixture into a dish and refrigerate for 2 hours.
  3. Form the chilled mixture into croquettes, dip them in beaten eggs, then coat with cracker crumbs.
  4. Fry the croquettes until golden brown and crispy.
