Ham In A Garden

Ingredients
- 3 c. cooked ham, cut bite-sized ⓘ
- 2 Tbsp. butter or butter substitute ⓘ
- 1 large onion, chopped ⓘ
- 2 green peppers, diced ⓘ
- 3 cloves garlic, chopped ⓘ
- 1/2 c. chicken stock or vegetable stock ⓘ
- 1 can (14.5 oz.) diced tomatoes, including juice
- 1 can (11 oz.) corn niblets, drained or frozen
- 1 c. frozen okra pieces ⓘ
- 1 tsp. turmeric ⓘ
- 1 tsp. cumin ⓘ
- 1 bay leaf ⓘ
Instructions
- In a large skillet over medium heat, melt the butter and add the chopped onion and green pepper, sautéing until the onion is light brown.
- Add the chopped garlic and sauté for 2 more minutes.
- Add the cooked ham, chicken or vegetable stock, diced tomatoes with juice, drained corn niblets, turmeric, cumin, and bay leaf. Adjust the heat to simmer and cook for 5 minutes.
- Add the frozen okra and cook for an additional 10 minutes.
