Ingredients

  • 3 c. cooked ham, cut bite-sized
  • 2 Tbsp. butter or butter substitute
  • 1 large onion, chopped
  • 2 green peppers, diced
  • 3 cloves garlic, chopped
  • 1/2 c. chicken stock or vegetable stock
  • 1 can (14.5 oz.) diced tomatoes, including juice
  • 1 can (11 oz.) corn niblets, drained or frozen
  • 1 c. frozen okra pieces
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 1 bay leaf

Instructions

  1. In a large skillet over medium heat, melt the butter and add the chopped onion and green pepper, sautéing until the onion is light brown.
  2. Add the chopped garlic and sauté for 2 more minutes.
  3. Add the cooked ham, chicken or vegetable stock, diced tomatoes with juice, drained corn niblets, turmeric, cumin, and bay leaf. Adjust the heat to simmer and cook for 5 minutes.
  4. Add the frozen okra and cook for an additional 10 minutes.
